Ichigo Ichie is a Michelin-starred restaurant in the heart of Cork, combining traditional Japanese cuisine with Irish ingredients. Founded by Japanese chef Takashi Miyazaki in 2018, it received its first Michelin star just six months after opening. The restaurant's name ‘Ichigo Ichie’ means ‘once in a lifetime’, reflecting its philosophy of unique dining experiences.
To prepare its highly sophisticated dishes, the restaurant uses a Retigo Orange Vision 611 combi oven, which is ideal for operations with a capacity of 51-150 meals per day. This model offers a wide range of functions, including steaming, sous-vide, baking, regeneration and special programmes such as drying and smoking.
